Crispy Fish Fillet Tropicale

I am one of those people that don't plan the meal. I cook whatever it is i have in my kitchen. One Saturday, I saw a fish fillet on my freezer and wonder what to make for lunch out of it.. and as i scan through my pantry, I have a can of pineapple and a bell pepper and some carrots.. and with the help of my reliable, yummy magazine, I had an idea to cook this sweet-sour fish fillet. This is one recipe that is so quick and easy to prepare. Try it out!

For Pineapple Sweet Sour Sauce:
1/2 cup crushed pineapple, syrup included
1/4 cup water
2 tablespoons sugar
1 tablespoon banana ketchup
1 teaspoon soy sauce
1/2 teaspoon salt
3 tablespoons vinegar
1 1/2 tablespoons julienned carrots
1  1/2 tablespoons julienned red bell pepper
1 1/2 teaspoons cornstarch, dissolved in 1 tablespoon water

800 grams of fish fillet and sliced into strips
salt and pepper
spanish papika
1 cup all purpose flour
Oil for deep frying

To make the pineapple sweet-sour sauce:
combine crushed pineapple, water, sugar, banana ketchup, soy sauce, salt and vinegar. Bring to a boil then simmer for 5 to 6 minutes. Add carrots and red bell pepper and cook until slightly soft about 1 minute. Add dissolved cornstarch and continue to cook until sauce is thick. set aside.

Seasoned the fish fillet strips with salt, pepper and paprika. Roll in flour and deep fry a few pieces at a time until cripsy and golden brown. Drain on paper towels.

Arrange fish fillet on a serving platter. Pour sauce on top garnish with parsley.
 Serves 2 -4 people.

Baked Macaroni

It's my boss and mentor's birthday and I'm making Baked Mac just for her... Happy Birthday Orange!!

1 500g pack Elbow Macaroni ( cooked as packet instruction)
1 cup evaporated milk
1/2 kilo ground beef
1 tbsp chopped garlic
1 tbsp chopped onions
2 200g tomato sauce
1 tbsp sugar
salt and pepper to taste
1/4 cup butter
1/4 olive oil
Quick melt cheese
 1/2 cup chopped bacon (optional)

cook the macaroni as directed. set aside.
In a heated pan, add olive oil and butter. Saute chopped garlic and onion. Add ground beef and cook for 10 minutes. Add tomato sauce, salt and pepper to taste and sugar, mix well and bring to boil. Add milk and simmer for 5 minutes. Add cooked macaroni and mix well.

Place the mixed macaroni in a baking pan and cover with quick melt cheese. Place in oven for 10-15 minutes or until cheese melts. top with chopped bacon before serving.

Recipe: Chili Garlic Chicken

Its the weekend once again and this is the only time I am able to cook (or experiment) for my family. The original recipe I found in the Yummy mag (Aug 2010 issue) actually used prawns but since I do not have prawns in my fridge, I have to improvise to what i have. I also don't have chili garlic sauce for the spice so I have to use paprika and siling haba to spice it up... the finish product is this..


Ingredients:
1 kilo Chicken (adobo cut)
1/2 cup chopped Garlic
1/2 tsp Spanish Paprika
1/4 cup butter
1/4 cup extra virgin olive oil
1 8gram sachet of real knorr sarap seasoning
1/2 tsp sugar
2 pcs siling haba sliced

Heat 1/4 cup butter and 1/4 cup extra virgin olive oil in a pan. Add 1/2 cup chopped garlic and 1/2 tsp Spanish Paprika, saute until fragrant. Add 1 kilo Chicken (adobo cut) cook until chicken is done. About 8- 10 minutes add 1 8gram sachet of real knorr sarap seasoning and  1/2 tsp sugar and 2 pcs siling haba sliced. Cook for 3 more minutes. Remove the chicken from the pan and topped with the toasted garlic and olive oil.
