About a week ago, the person in charge of our quarterly regional newsletter sent an email to all the staff to share their recipes. It can be a native food or any food recipe that you want to share.
Finally, I can share the recipe of my favorite pasta dish 'spicy sardines pasta'.
I tasted this pasta at Kitchen in Greenbelt and liked it so much .. I tried to cook it at home.. and I would say... its more delicious because it was my labor of love... ang hirap kaya mag tanggal ng scales at mag debone ng sardinas haha!
so here it is..
Ingredients:
250g of Linguine Pasta
2 bottles Spanish Style Sardines in olive oil (or corn oil) (mild hot or extra hot)
10 cloves garlic, chopped
1/4 cup olive oil (or corn oil)
salt and ground black pepper to taste
chopped Basil leaves (fresh or dried)
1/3 cup (80 g) grated Parmesan cheese
Directions:
1. Cook Pasta as instructed in package. set aside.
2. Finely chop sardines (remove the scales and deboned). set aside.
3. In a pan, heat olive oil and saute the garlic until light brown.
4. Add chopped sardines, basil leaves, salt and pepper to taste. Mix well.
5. Toss in the cooked pasta.
Serve with parmesan cheese and toasted herb bread.
Servings: 6 persons
